Curry Sauce
1oz of fat (butter or ghee
1 large onion, finely chopped
1 tablespoon of curry powder
1 level tablespoon of flour
half a pint of stock (veg or chicken)
2 tablespoons of mango chutney
half a teaspoon of garlic salt
a pinch of Cayenne Pepper
Place the finely chopped onion and the fat in a 2 pint bowl, then microwave for 6 minutes. remove from the microwave, add the flour and the curry powder and then mix well. Microwave for another 2 minutes. Again remove from the microwave and gradually pour in the stock stirring continuously until smooth, then cook for a further 3 minutes. Add all the other ingredients, season to taste then cover and cook for another 8 minutes, stirring once or twice. Finely when cooked stir well then allow to stand for 10 minutes before serving.
Can be reheated.
